You probably need to install yelp and the corresponding mozilla/ firefox/seamonkey. That would work for help menus.

For other kind of links, you should have a BROWSER variable defined to your favourite browser, then it will work.

Finally, in some applications you can define a command for your browser, here I suggest: open %s, or if it does not work: / Applications/Safari.app
