If you want to have multiple sessions of Mac apps, yes, fast-user-switching is the way to go. But all it does is allow more than one user to be signed in graphically at the same time. You can switch between the sessions on the console without having to log out and back in. But you don't get multiple sessions that are simultaneously visible.
You are wrong. Why don't you just try it?
