I don't have it open in front of me. But, as I recall, there is a java compiler option in the target which allows you to pick which version of java to use to compile your code. Unless you're using an ant-based project, in which case the setting would be in your ant build script.

I know this is obvious, but I'm at a loss none the less.

XCode 2.3, using a brand new xcode-template-generated java tool project. (well, not brand-new, but brand-new with some added code, not a converted project.)
