If you select a group by its header then the files contained appear in the list above the editor, at least they do in the 'all in one' layout.

This list can then be sorted alphabetically. Once sorted you can select all of them and drag the selected items back onto your group header.

Xcode will 'add' the items into the group in the same order, replacing the unsorted items with the (same) sorted ones.

I do not know how you will sort all of them across the groups though.
