So, I've solved my issues for now. I went to this website and downloaded a pre-built libpng and libjpeg universal:

This solved my build problem.

Interestingly, since I don't actually link against this, my app runs on both a PPC Mac running 10.4 and a different Intel MBP running 10.5, and they don't have libpng installed.
