Is it me or the find/replace *in selected text* has disappeared in Xcode 3.2 ?

The feature is hidden. Set the search bar to Find & Replace, then hold down the option key. The Replace All button becomes "In Selection." I don't think there's an equivalent for find without replace.

I filed a radar on this one, and suggest you do the same. They can claim a precedent in TextMate doing the same thing, but I'm not sure TextMate is a gold-standard source for human-interface design. They also have the problem that they've run out of room in the bar, but it _is_ their problem, and one they ought to solve.
