Several things
- did you also trash /Library/Filesystems/Xsan/config on the clients
(as well as servers)
- did you get the files /var/run/xsan_* on the servers
- for good measure, also /Users/*/Library/Preferences/
com.apple.XsanAdmin.plist

Did you unlabel the LUNs? cvlabel -l should help you see, and
cvlabel -u will help you unlabel them.
