First, I would run with server4 as the primary MDC since it's running
less services.
-Backup all necessary data; OD users, groups, computerlists etc.
(passwords will not be saved) and mail store data. Follow the migration
guide:

-archive and backup /Library/Filesystems/Xsan/config/ (on both
controllers to be thorough)
-cvadmin fail volume(s) to server4 and confirm it is managing your
volumes(s).
-shutdown server1
-Promote a replica to master and confirm operation (server2 for example)
-Bind other replica (server3) to new OD master (server2)
-bind clients to new OD master (server2)
-build server1 from scratch
-configure server1 with backed up data and confirm OD and mail operation
-at an appropriate time, bind clients to new OD master (server1 - users
will lose legacy passwords)
-demote server2 and server3 to standalone and re-establish as replicas
to server1
-install Xsan on server1 and configure as medium priority controller (my
recommendation based solely on service load)
-cvadmin fail volume(s) to server1
if you weren't already running Xsan 1.2 you should run cvfsck on each
volume after upgrading. see the update pages on:
http://www.apple.com/support/xsan/
-confirm volume(s) integrity
-build server4 from scratch
-install Xsan on server4 and configure as high-priority controller
-cvadmin fail volume(s) to server4
-archive smb and afp shares for servers 2 and 3. Follow the migration
guide.
-build server2 from scratch
-install Xsan on server2 and configure as client
-build server3 from scratch
-install Xsan on server3 and configure as client
This procedure will minimize down time to clients both with regards to
both OD authentication and Xsan volume availability - little effect on
user experience other than password change procedure. Xsan volume
failovers have been nearly seemless in my experience. You will have an
interuption in mail without a failover mail server. If you can afford to
down the clients you can eliminate some of these steps.
