I wish I had an extra iPhone 4 laying around so I could installed the iOS 5 seed… but based on past experiences you are unable to downgrade once installing it, and a lot of times the iOS betas are unstable with features disabled.  I use my iPhone for too many crucial daily tasks to risk it… :(
