Found the problem.
Unexpectedly, the culprits were all the ‘do shell script “sleep 0.1"’, etc.
I replaced every one with a ‘tell current application to delay 0.1’, etc. and my Application is running like greased lightning.
Go figure! Anyone care to comment on why this should have occurred?

Something I’m doing is obviously having an adverse effect on whatever runs these App built from ASObjC.
I’ve used Activity monitor to check the Apps, and if I force quit the second app, the main app returns to normal. Could it be that only one ASObjC app can be run at a time?
Running Yosemite on late 2014 i7 iMac with fusion drive.
