That sounds like a text view. But your earlier description of using a table sounded more sensible, I have to say -- less chance of mucking up existing entries.
I posted a question on macscriptor, but did not receive an answer, so put it in the ‘too hard’ basket, and stupidly fell back on editable tables.
So, my questions to you are…
• How do I set the cursor to end of text field text when user presses ‘return’ whilst editing?
Generally, you don't. Text fields are designed for relatively simple entry. If you want something more complex, you go to a text view.
You can do a certain amount extra in text fields via a delegate, but I doubt you want that complexity.
Mind you, a text view is a fairly complex beast, too.

As well, I’ve searched for ‘editable book samples’ but cannot find any links. Could you please refer me to a page?
It was shorthand for "any of the table samples in the book that include editable tables".
