If it was just a simple delete, chances are the files are still
electronically-physically (for lack of a better word) on the hard
disk; the only thing that's lost is the link the computer needs to
find the location of the file. If you used any variant of "zero all
data" (once, 7x or 35x), however, your chances are much, much smaller
since the actual files have already had electronic gibberish written
over them.
A quick Google on "data recovery Mac" would do the trick - you'll get
things like Kernel for Mac Data Recovery. I haven't lost a lot of
data (I HAD actually, but no real mission-critical stuff), so I
haven't had the digital grim reaper visiting my files (not all too
often, at least). I would suggest that you don't use your Mac for a
great many things until you have a backup/data recovery utility
handy. Any new files you create could already be erasing more and
more of your old stuff. (When you dump something - unless you use
Secure Empty Trash - the Mac makes space to write new data where the
old file used to be.)
(Think of the average file erasure as merely mowing the lawn, where
the grass is your files. (I know that this comparison probably won't
be the best one.) There's still grass after you've mown the lawn.
However, if you're zeroing all data, it would be like digging the
whole thing up -- digging away the roots of the grass.)
I am _assuming_ that even if you did erase all your files by way of
the Mac OS X installer app, the data wasn't zeroed (a la "zero all
data").
