Bien sûr Roger,
K only text is not the only printability issue you can get with
Device profile to Device profile conversion.
You also have:
• pure K grays (drop shadows...)
• C, M , Y only colors often used for vignettes, logo colors...
• CM, MY, CY only colors often used for text, vignettes, logo colors...
• rich blacks (K100% + C40%...) used to have deep blacks that are
easy to print
• solids (100%) used in layout and in control strips as well
which can cause serious printability and registration problems if
they go 4 color.
There is also a couple of other reasons that are maybe too specific
for this forum.
You can find more details about the advantages of using
DeviceLinkProfiles in Alwan LinkProfiler and CMYK Optimizer
documentation.
Regards from snowy Lyon,
Elie

One remark though, Preserving black text is not the only issue

Could you kindly expand Elie?
