Ahh, love those Surecolors - and good to hear you're on the S70. ONYX offers the "AccuPhoto GSX" "Contone" mode that utilizes preset calibration parameters that leads to an easy, 1 step profiling process. This will be "good enough" for many, but since these preset parameters aren't optimal for most media, advanced users will want to go through the more advanced procedure using the "Stochastic" mode, determining optimal ink limits, linearization curves, and total ink limiting for each media prior to profiling.
I was at Epson's office earlier this year and they were telling me about how they optimized the AccuPhoto GSX for their canvas. They were blown away that I could beat the AccuPhoto GSX mode with a custom setup in Stochastic mode.
Profile as CMYK in AccuPhoto GSX, and profile in CMYKO in Stochastic mode. i1Profiler is great in this mode especially with a few tweaks.
In order for ONYX to recognize i1Profiler's DCS targets, you’ll need to edit the ONYX Quick Set, click “Advanced”, go the PS/Postscript tab, enable separations and add the appropriate channels. Use “All ICC Profiles OFF” when printing the target in ONYX.
Of course, the Achilles heal of ONYX is knowing how to find the sweet spots for Ink Restrictions and Ink Limiting prior to profiling. That's a topic for another day!
