Thanks for your answer.
Actually, in an AudioServer plugin, the size of the buffer is not constant and is sent by Core Audio at each IO cycle, in an attempt to optimize the IO cycles and satisfy all clients (each client, of course, requesting it's own buffer size).
I don't specify it myself.
