I've used both... VMWare under the Dell/PC platform and of course Parallels under Mac...
Here is what I know about VMWare:
It works well... but far from amazing... updates few and few between with little true enhancements.
Here is what I know about Parallels:
The speed is jaw dropping... it boots XP on my MacPro in less than 2 seconds (no exaggeration)... Parallels has EXCELLENT customer service... and Parallels releases updates frequently with new features that are totally amazing.
But here is the number one reason I will NOT use VMWare under Mac OS X:
When the Mac first released the Intel version I talked to VMWare, and they told me, and I quote, "The Mac is not our primary market, and at this time we are not considering an OS X product."
Mind you this is after we had told them how much people dislike Microsoft and would use VMWare just to NOT use VPC...
We were also the very FIRST customer (not just agency, but very first sale) to purchase VMWare when it went official back in 1999, so we had a pretty good relationship...
Now that Parallels is kicking ass in the Mac market, VMWare decides to get in on the game... well guess what - Parallels gets our business because they constantly update their software, they have features that nobody else has (I really hope they patented their coeherce mode)... and above all they are just a good company...
We just purchased another 15 parallels for all of our new Macs that replaced the Windows machines we decommissioned.
Keep it up Parallels... and if you need case studies I can show you how we got rid of every Windows PC in our healthcare division inside of 90 days, replaced them with Mac and Parallels and haven't skipped a beat.
If you want great customer service, consistent "wow I can't believe they did that" updates - go with Parallels... if you want "second rate, trying to make a buck at any cost", get VMWare....
These are my opinions of course... but there are VERY few programs out there that I classify as amazing... in fact, there are only three... OS X, iTunes, and Parallels made that list with their last beta release (yeah their beta is that great).
