Gregory,
In the past I've used the following link for guidance when creating
an OS install DVD from CDs. Though it's been a while I believe the
thread that follows this hint will give you what you are looking for.
There are a number of .plist files that will have to be modified in
order to have optional packages be available at the "customize"
button - but it should in theory be possible.
For my money, I just allowed for extra space on the DVD that allowed
me to package additional software so that it would be available on
the CD - incorporating these installs into the base install seemed to
be more trouble than I thought it was worth.
