QuickTime does do something called a Text Track, which can effectively
be used as a caption. Brian Deith at the University of Wisconsin-
Madison has developed a tool which allows the easy creation of a
caption/text track for QuickTime movies, simply by using a preexisting
transcript or any text file. It's early, but it's easy enough for
anyone to use.

I've changed the name, which means I can't have the old tool
(transcript to cc) update to the new program automatically.
SIGNIFICANT CHANGES:
Now uses a document-based project. That is, you can save your work
and come back to it. Wow! What a concept!
UTF-8 text is supported. Hence the new name.
Right-to-left scripts, such as hebrew, are supported. If you try to
hand it a vertically oriented script, it will probably crawl into a
corner and whimper quietly to itself.
Multiple text tracks are supported. Just drag in another text file
to create another track
Typically, captions are rendered by the quicktime libraries during
playback. This can be a problem if the font required for rendering a
particular language is not available on the playback machine.
Therefor, the captions may be "prerendered" into a graphic track.
The drawback is that the track would not be searchable, and the
captions will be pixellated when scaled.
Syncing may be done via keystrokes now.
No expiration date. Free.
Requires Mac OS X 10.4.
BUGS, LIMITATIONS, AND MISFEATURES:
There is no way to delete a track. Yet.
There is no way to duplicate a track. Yet.
Text files MUST be UTF-8 encoded. Which means good old ASCII for
English. But watch this when you use a non-latin character set.
Doesn't report errors that it really should.
Exporting the finished movie doesn't allow for reencoding the video
or audio track. Yet.
There is no undo.
Choosing print will probably not do anything terribly useful. We
will have a our testing monkeys choosing print over the next few
days, and assuming they survive the experience and are able to
report back, we'll be working on making the print command do
something useful.
