One of the hurdles to adoption for Apple was that ZFS cannot be

Apple has recently (as of 10.4.8, I believe) implemented the ability
to boot the kernel & extensions off of a hidden partition and then
use that to mount a different partition as root (this is what the
128MB dummy partition after each data partition described in http://
developer.apple.com/technotes/tn2006/tn2166.html is for). As far as
I know this is only currently used for booting from a software RAID
(EFI loads the kernel from the hidden partition, which loads up
copies of any IOKit extensions needed to continue booting and then
mounts the RAID as the root partition). However, I don't see any
reason the same approach wouldn't work for booting with a ZFS root.
It could also be used for other interesting things, like encrypted
root volumes.
