I think it really depends on the NAS itself. Some support AFS, some don't. Even for the ones that don't, Mac OS X is versatile in that it can use Samba, NFS, FTP... the list goes on... Most NAS devices are configured through a web interface as well, so that takes setup problems out of the mix (though I'm fairly sure devices by Iomega have their own proprietary setup software that's Windows only - at least that's the way it was a few years ago when I used one).
