We're not insane! Finally, someone else with the same thing :)
A couple of ideas... I'm not so adverse to turning off On access scanning...there's other reasons besides FileVault to have it off anyway. I'm of the opinion that if there's a scheduled scan every few days, you're likely ok. Excluding the /Users folder though... that's where any of your dynamic data is stored anyway so that one I'm less comfortable with.
Norton is interesting. Have you found this is a good solution? Is it any less quirky than McAfee?

We've run into it as well, and it looks like it's an OS bug. The only
fixes seems to be:
1. Turning off On Access Scanning
2. Excluding your /Users folder in Virus Scan's preferences
3. Switching to Norton AntiVirus 11 (which has apparently coded
around the problem.)
