You could pick and choose which ones to require.
Also, the Take Control books are a great introduction to many topics.
There are relatively short and easy to read e-books.

One or two of those books is a good start.
You can work with the publishers about a site license for the books
you buy.
Finally, the Mac OS X essentials books are very good. They are the
books used for the certified classes.
