No, the account in Entourage is not in any other client, so I know for certain it was sent using Entourage. I only have one "shared" account, and that is in Mail.app and Thunderbird.

I think iCal only uses Mail.app. However, which account it uses in Mail.app is the mystery. I am going to assume, based upon what you told me, that you have a duplicate account, one in Mail.app and same one in Entourage?
When you sent the iCal invitation, it used Mail.app, which account it used, is actually the "shared" one.
If you have multiple accounts in Mail.app, try re-ordering them by dragging them up and down in the Account Preference Pane, restart Mail.app and iCal and see if that makes a difference. Or am I totally off my rocker?

So I actually use 3 different mail clients, for various things, because of needing my CAC or only having access to OWA, and other things: Apple Mail.app, Thunderbird, and Entourage, and multiple accounts on some of these . Today I set up an event in iCal and added some attendees and clicked on "Send". It sent via an account using Entourage, which was not the expected behavior (I wanted it to use Mail.app, as that has the right account set up for it). Thinking I messed something up, I began looking for preferences that control that behavior. I found none. Has anyone experienced this and found how to control it?
iCal calls the registered default email client, IIRC, but the only UI for this is in Mail.app:
