I use pgp on leopard and it works great with little impact on
performance though lack of snow lep support is annoying buts it's in
the works
Another option is two marines armed with m4s as a theft deterent. ;)

problematic relationship - outdated products and poor support...)
I'm still trying to figure out the best way to secure an OS X Server
