Well technically speaking, FIPS certified means they paid the
"political dues" to NIST in my opinion.
Looking at the specs is sufficient for me. I know no average joe is
going to hack the image.
Just because it isn't certified does not make it less secure, although
it does affect "official" usage.
It's a great app and I love it.

Can anyone recommend a program that runs on Mac and Windows that will
allow me to share encrypted drive images across both platforms?
Example: I can create encrypted DMG files in Mac, but windows cannot
read them.. I can use something like Cypherix to create something in
Windows, but mac cannot read them...
I would like something that I can read and write on both systems to a
thumb drive to keep things secure, but not have to jump through
hoops to
get it to work.
