I tried Matt’s solution below. It worked as far as now listing my new CAC in keychains as a CACNG vs PIV however, it would not allow me to authenticate. I checked for MAC OS 10.6.2 updates – all current. I then ran disk utilities from the SL install disk – made some permission repairs. I tried the CAC again – no change. I moved the CACNG tokend to an old folder and moved PIV tokend to the active folder. I can now again authenticate with my CAC (logon to my Exchange server OWA) but it keeps asking for my pin every few minutes. Other than that it seems to work.
Any news on a CAC fix for Snow Leopard? Any other ideas?

Find, download, and install a program called UnPkg, use it to extract the CACNG.tokend file from the http://static.macosforge.org/smartcardservices/downloads/installers/CAC-NG-v0.9-beta-snow.zip pkg file, and finally copy or move the file to your /System/Library/Security/tokend folder. (You will need to authenticate with your admin password for this)
You should now be able to see the "CACNG..." keychain appear when you run the Keychain Access app and then insert your CAC into the reader. You should also be able to unlock the padlock using your CAC pin. I don't have a Next Generation CAC to verify this all works successfully. Hope this helps though!
