open smb://<server_name>

Presuming you just want a shortcut. If you want to automate a larger process, then using the lower-level tools like mount_afp may be a better approach.
Also worth investigating is osascript, to tap in to the various Applescript options, like telling Finder to connect to a server. You can bypass a lot of bootstrapping with mixed-mode stuff like this.
