To consumers, what makes a Mac a Mac is Aqua... To IT people, what makes
a Mac a Mac is its reliability, stability, and security. A Mac is
reliable, stable, and secure because of its BSD foundation - NOT its UI.
When you're writing iOS apps, you're coding in Objective-C and using the
Cocoa Touch API - Cocoa Touch provides libraries for touch based
gestures, animation, and iOS style multi-tasking.
Cocoa (not Cocoa Touch) has an open source implementation called
GNUstep.

Right, so what makes a Mac a Mac is the UI, no? What makes iOS iOS is
the
UI. When you're writing iOS apps, you're not writing to the underlying
unix, you're writing to Cocoa.
Is Cocoa open?
