Short Answer: Yes, but please allow me to clarify to avoid confusion.
As most everyone on this list knows, I am a stickler for accuracy on references, so please allow me to restate a few facts to hopefully clear things up.
More detailed Answer:
• Enhanced Data Protection (Class Protection of Files) is only engaged when you have a passcode assigned to the device.
• Default DP Class was first introduced to developers via the Dev Portal after the release of iOS 6.
• Default DP Class is defined in the Provisioning Profile of an App (part of Signed App metadata)
• Backups do not contain the Apps themselves, but rather references to the Apps for restoration
• Restoring Apps, will pull the most recent version from the Apps Store (or Local iTunes Library - local backup).
• Previous Apps posted on the App Store did not contain required Provisioning Profile Default DP content.
• Replace “previous" Apps on device - delete and re-download the App from the App Store gives you default DP
• Wipe and Restore device from iCloud would restore your previous data with the new Apps (with default DP)
