I doubt that there is information on this available (Scatternets being very rare and BT on iPhone too, so the combination... :)
Scatternets are handled by the Bluetooth chip itself, if not told to not work in a Scatternet configuration. On the iPhone, the official/non-JB way is to use GameKit to establish a connection. Did you try this with 3 devices (B connects to C and A connects to B)? Please tell us if this works - I'd like to know that too (curiosity).
If this doesn't work, please have a look at the BTstack.org project which provides an alternative open source Bluetooth stack for iOS and other embedded devices.
And don't miss the papers on Scatternets on http://btnode.ethz.ch where I worked with Scatternets a while ago.
