Just a few questions...
1. Which protocols and profiles are supported?
We support all the major protocols - L2CAP, RFCOMM, OBEX, SDP Profiles supported include Dial-Up Networking (DUN), Serial Port, and Object Push/Exchange.
2. Can the Bluetooth device be accessed from Java, JNI, or JDirect3?
You can call pretty much anything via JNI, so you should be able to call our C API without problems... but, we have not tried it, so your mileage may vary. If you have success (or not), please let us know.
3. Are there any whitepapers, example code available anywhere?
You should be able to download the Preview SDK from the Apple ADC site; it was released last week. It covers using all the basic protocols, and has fairly extensive headerdoc. If you have questions, ask them here and we'll be glad to help. Specifications and stuff can be found at: www.bluetooth.org

ADC members can use this information, but since we have not made this API public yet, you should assume that it is non-disclosable to developers who have not registered with Apple.
