As I have learned, the number of simultaneous connected devices is based on the actually memory in the iPhone, designated to the Bluetooth chip.

So, as we don't know how much memory Apple designated to the Bluetooth LE protocol/hardware, and how efficient they have made it, it's hard to tell
I don't remember seeing any official number from Apple?
