Going to settings -> general -> reset -> reset all settings should reset your bluetooth uuid cache. If you do not want to reset all settings, you can also use a different bluetooth adress on your peripheral in order to test peripherals that have not yetbeen connected to the system.

I can successfully read my peripherals UUID's while scanning for devices and choose which to connect to or not. I'm just wondering if i'm going to have problems when a new peripheral is thrown in that the phone has never connected to?
To test this, is there a way to reset the phones knowledge of any UUID?
