I'm informed that Tiger does not have the Bluetooth Serial Utility for defining serial ports that are not created properly during the pairing process.
The function moved to System Preferences > Bluetooth > Devices > Edit Serial Ports: http://www.onmadesoft.com/help/BluetoothConfigTigerHelp.pdf Unfortunately there is no way to access non-"Serial Port" based profiles as it was before.
This is something that happens quite frequently with some phones (e.g. iPAQ 6315, XDA II, some Siemens & Moto models)
What are the problems exactly? Are the profiles incorrectly flagged or are the users pairing many phones? The Mac OS X Bluetooth-modem port uses the Dial-Up networking profile of the last paired device. A terrible solution (same for Apple Address Book) which was much better back in Mac OS X v10.1 with the Bluetooth Preview release.
