I solved the problem by changing my Colorsync Users preferences from Mime encoding to plain text. This last digest (only two messages) came through fine on my iPad. I'm curious if anybody has had trouble reading the Colorsync-users mailing list on an iPad. Maybe I have some settings incorrect, but I get the normal Colorsync headers, list of messages and who sent them, etc. But, right after the initial list of messages and the authors, I get the following for each individual message:
"This message cannot be displayed because of the way it is formatted. Ask the sender to send it again using a different format or email program. message/rfc822"
If there were 8 messages in that particular mailing, the above repeats itself 8 times.
At the bottom of my iPad Mail page, it says "This message is only partially downloaded." I click on the "Download remaining 17.7 KB" bar, and the gear spins, but nothing ever happens. I can read the messages fine in Gmail or using Mail on my Mac, but not on the iPad.
Any solutions or suggestions?

I get individual messages instead of the digest, and the messages look normal to me on an iPad.
