If you have good profiles for cross rendering, appropriate paper for proofing, there's no reason why it can't be used. I've done similar with a 3880 (now own a P800), you may need to consider if you'll need a substitute print driver if dealing with CMYK pages rather than just images that could be proofedCMYK to RGB through the native driver. Wouldn't need big proofs, just good, accurate proofs. I would do all of the necessary custom profile generation myself, so I wouldn't be using a "canned" profile for the paper/ink combination I settle on.
If the Epson isn't the best choice, I could use some recommendations for a comparable printer.
