With gdb on the commandline you can attach to any process while it is running.
Presuming you notice when it is running and you catch it before it dies, yes. (And you catch all of them -- presumably multiple instances might get started.)
And if you were wanting to see how its startup behavior works in the situation where it's being launched, your solution won't be sufficient.
