On Linux, are you doing this using LVM? I know LVM lets you set up mirrors on a logical volume-by-volume basis, which is what allows multiple filesystems to be independently mirrored. To do the equivalent on Mac OS X would require Apple (or a third party) to port the open-source LVM package to Darwin. I would personally LOVE to see LVM on Mac OS X, at least as an option for the server OS, as it would bring much of the flexibility in filesystem and disk management that other UNIXes enjoy to the platform.
