I have set up RAID-1 mirrors on Fedora Core 2 using the software RAID support and there is no limit to the number of filesystems on a given disk that can be RAID-1 mirrored. For example you can have /boot, /, /var and /home all mirrored on the same disk with each having its own ext-3 partition.
