Unless you’re writing kexts, you don’t really need to care whether the kernel’s 32-bit or 64-bit. Provided you have an x86_64 Mac, you can run 64-bit applications, and you can switch between 64-bit and 32-bit mode for your application by using 'arch', Finder’s Get Info panel, or Info.plist keys as necessary (or just create separate build products for each architecture while testing).
