This is indeed what I needed. pkgutil shows our installation, and I can remove it with pkgutil --forget. Something else I didn't realize: the .pkg file that PackageMaker.app creates is not a bundle, but a single file! I don't know what I did to get that; I don't see a setting in the UI.
