There is no global system version that encompasses what software updates have been applied. That'd be like asking for a version number that tells you what apps are installed. Instead, you should be checking for the presence of your specific requirements. If you know you need a certain version of a firewire driver for your electric dog polishing gizmo, check the appropriate kext. If you need specific frameworks, look for them. There are many slight variations of the OS that Apple calls 10.5.1.
From the user's point of view, they all offer the same features, and are all 10.5.1.
