I'm a big fan of using vendor packages as-is whenever possible, and collecting your modifications or additions into a separate package (or packages) that you install after the vendor's package. This is generally easier, less error-prone, and makes troubleshooting easier. In the case of the Office 2011, we do all customization in a separate package.
