Modifying existing package - MS Office 2008

Had something that I expected to be simple, but Mr. Murphy and his law have struck again. Attempting to build a fairly vanilla MS Office 2008 package - the only "customization" I want to make is to either remove the Microsoft Messenger component, or simply change the default "enabled" status to disabled so that I can push the installer out via ARD and not have Messenger installed. I'm able to open the package from my installer CD in PackageMaker, make the changes, and build a new package successfully. However, when I try to actually run the new package, I first notice that all of Microsoft's custom artwork is missing from the installer itself, and then once I get to the "Select Destination" stage, all disk volumes are unavailable, with the message simply stating "You cannot install Microsoft Office 20087 for Mac on this volume. Installation cannot proceed, as not all requirements were met". Test machine is a quad-core Mac Pro, 8gb RAM, with 500+ gb free disk space... certainly meets the hardware requirements for Office. Anyone know why making one simple change is causing this to break? I don't have Composer or anything else at my disposal, so my choices are either modify the default package, or move on to building the package by hand. :( ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ W.
