Pros:
- they are single file so you don't have to zip/tar them to distribute them. It also solves an AppleShare volume issue IIRC.
- they have some niceties such as the ability attach a pre/post install script to a bundle (app, plugin) inside the payload.
- the receipt is always in the data base from 10.5 to later.
- don't tell Apple but you can also get HFS+ compression with them upon installation.
Cons:
- they do not include any chrome (no welcome, read me, EULA, background picture)
- they do not let you specify installation requirements.
- the format is not fully documented.
