What's this "diverting" thing, and why does it choose to do it with only two of the four apps, and how do I stop it from doing this?

Check the built package and look for a relocator. This could be an explanation.

In the package's Contents/Resources folder, there's a file called TokenDefinitions.plist which contains a dict with two keys, each having the name "pkmk-token-*", which call out the two apps being diverted.
