That's a tough one. There might be some way to get the NSView that represents the item and disable it through [NSView setDisabled] (or whatever would be appropriate), but it would certainly be hacky.
If nothing else, you could notice when the parameter changed and set it back to the correct value. A little annoying from a UI standpoint, but it's an option.
