We've had some challenges recently in getting the time zone and time
server to stick and have it properly deployed when using DeployStudio
or InstaDMG to build the master image. Since the time settings are
established with commands, doing a snapshot package doesn't capture
your change to "America/Denver" for time zone or your internal time
server for time synchronization. Bottom line, this has to be done with
a script.
Brent Hayward, my coworker from Iowa, solved this problem with
brilliant simplicity. He embedded a script inside a payload-free
package (a package that installs no files, just runs a script) that
will change the time zone and time server, based on what you name the
package itself. Instead of diving in and editing the script to take on
your settings, simply change the name. Check out this quick tutorial
video to see it in action.

You can see that the default time settings are in place (Cupertino for
time zone, and time.apple.com for the time server). I then expand the
zip file, change the name to match my settings, and run the pkg
install. Note that I named the package:
mountain,time.colorado.edu.pkg
You must have a comma in between the zone and the time server. Be sure
that .pkg is the end of the file name. You can install this package
locally on your system, remotely to your machines with Apple Remote
Desktop or as a post-install with DeployStudio. See the attached
screen shot for how to set it in DeployStudio.
You MUST check the box for a postponed installation so that the script
can run and set the time settings. If you need to run it again
manually, it is sometimes necessary to delete the receipt left in /
Library/Receipts.
