The way I make my Office packages is this way.
Use whatever application you are comfortable with to make your package.
Composer PackageMaker or what ever, I know there are a number of free ones out there.
I use Composer to make my Packages.
I have a image made with all the OS updates done and Composer installed.
No extra Applications.
I run my base snap shot.
I now install Office making certain that I do not add any thing to the dock.
Do all the office updates, as there are plenty.
Now I run Composer to tell me what has changed. In the process I tell it to delete specific Information about Users, as the user on this machine will not be on the target computers.
I now have a Package that I can use with ARD or in my Deploy Studio work Flow.
I use this process to make my packages it seems to work OK for me this way.
I have made packages for Office 2004 with Converter, Office2008, Tux Paint, Comic Life with Serial Number, World Book 2004, iLife 06,iLife 05,Fire Fox,
I have also made a Package for First Class Mail and modified the Default user Template so the special configurations for that application carry over for when you add users.
