I have some experience with a very similar configuration (OS X server w/ paper cut secondary server and primary server on Windows 2008 server).
We deployed the drivers to all the clients first, and then built our own printer installation packages using “The Luggage”. The hardest part was deciphering the PPD options to configure the queues with good defaults since most printer manufacturers do not document anything.

I have found that Macs printing to windows server queues is not as reliable as I would prefer, and have had better success when I can force password auth instead of kerberos. Printing to OS X Server queues seems more reliable (and is needed for iOS), but queue management on OS X has fewer options than Windows server.
You can also specify AirPrint destinations in config profiles if that works for your environment (you won’t have access to the full print driver options on OS X).

In some cases, the clients can't see the shared printers at all. Deploying them through Casper hasn't worked well (I think it has to do with Casper using the generic PPD, so we're working on that). I can add printers to AD bound Macs as Open Directory printers that print through our Windows server, but I can't deploy them that way through Casper.
I'm interested to see how others are handling printing. Thanks.
